Join Food Historian Clarissa Clifton as she brings history to life during one of her culinary demonstrations at Roswell's Archibald Smith Plantation Home (935 Alpharetta Street, right next to City Hall). On the menu today is an authentic one-pot jambalaya! Here's the recipe! No open hearth at your house? No problem. You can make this one on the stove. --3 lb beef , 1” cubes --3 lb deer sausage --3T sweet Basil --½ c dark roux --1T salt --¼ lb butter --1t Cayenne Pepper --2c onions, diced --1t black pepper --1c bell pepper, chopped --2c rice (Carolina Gold) --1/2c celery, chopped --1c green onion, chopped --3T garlic --2qts chicken stock Clarissa hosts these free demonstrations on the 2nd and 4th Saturday of each month from 10:00 a.m. to 3:00 p.m. at Archibald Smith Plantation Home. This is a great way to spend the morning after a trip to the Roswell Farmers and Artisans Market, where Clarissa gets her fresh ingredients! The market is open from 8:00 a.m. to noon at City Hall, 38 Hill Street, each Saturday. As delicious as it looks, we are sorry, but Clarissa does not feed the public during this time. These are only demonstrations, but feel free to learn a thing or two to take to your own kitchen!
